Located in Piedmont, in the Barolo wine district, the Paolo Scavino winery boasts over a century of history and is still a family-run business run by Enrico Scavino and his daughters (third and fourth generations of the family). The estate boasts approximately 30 hectares of vineyards spread across various plots in some of the area's finest crus. The Nebbiolo grapes come from the Ravera site, located in Novello, at approximately 420 meters above sea level. Here, the vines enjoy eastern exposure and calcareous soils. After manual harvesting and a 12-day maceration, fermentation takes place in stainless steel with indigenous yeasts, and the wine ages for two years in a mix of barriques, large barrels, and stainless steel before bottling. The result is a complex and harmonious wine, elegant and distinctive. In the glass, it reveals an intense ruby red color with garnet highlights. Its aromatic profile is broad and fragrant, with ripe notes of red fruit and hints of violet on a spicy undertone. On the palate, it is concentrated and well-structured, deep and intense with a pleasant mineral note. It has silky tannins and a refreshing acidity that balances the flavor. The finish is long and recalls notes of dark chocolate and tobacco. It's the ideal wine for braised red meat or game.
