Tannins are firm and acidity fresh; oak influence is noticeable. Good with steak, lamb, roast chicken, roast pork. From the excellent 2005 vintage comes this superb wine from Pauillac 2ème Cru Classé, Château Pichon Baron. It is a beautifully composed blend of 65% Cabernet Sauvignon, 30% Merlot and 5% Cabernet Franc, opening with delicious scents of black fruits, violets, cedar, camphor and graphite. It is full-bodied and expansive on the palate, with pixelated tannins, excellent mid-palate concentration and a long, mineral-infused finish. Absolutely perfect for drinking now but should continue to improve over the next decade or so.
