Thierry Pillot is part of a young generation of talented winemakers from Chassagne-Montrachet. He’s been running his family estate since 2004 and making wines under his own label on the side. This is Thierry’s 2021 ‘Les Castets’, a Premier Cru vineyard situated just above the village of Saint-Aubin, which is planted with both Pinot Noir and Chardonnay. The 2021 vintage is drinking well now, but it has the potential to develop even more complexity with age.
