Salon is the iconic champagne house located in the village of Le Mesnil-sur-Oger in the Côte des Blancs region. Salon is known for producing exclusively Blanc de Blancs cuvées from Chardonnay grapes grown in their Grand Cru vineyards. The 1979 vintage had ample time to develop in the bottle, showing a complex and mature profile. On the nose, expect to find aromas of toasted brioche, ripe apples, honey and a hint of nuttiness. The palate is rich and creamy, with flavours of baked pears, lemon zest, and almonds, balanced by a backbone of bright acidity and a long, mineral-driven finish.
