Merchant's description

Drink it now or cellar for up to 10 years. No need to decant but best to open it half an hour before service. Located in Pyrgos, on the picturesque Greek island of Santorini, Santo Wines is a union of cooperatives founded in 1947. Today, the company, the largest on the island, has around 1200 members and produces excellent quality wines from native grape varieties. The cooperative is also committed to safeguarding the biodiversity of the island, promoting other local products, and working in compliance with local winemaking traditions. The grapes are sourced from 100 year old vines, located in the Akrotiri village. After the harvest, the Assyrtiko grapes are macerated for a few hours at low temperatures. Fermentation takes place first in stainless steel vats and then continues in oak barrels. The finished wine then rests for 12 months in barrels and a further 12 months in the bottle before being released on the market. Santorini Grande Reserve by Santo Wines has a bright and clear color with golden tones. On the nose, it reveals an intensely aromatic character with floral and dried fruit notes and some hints of honey. On the palate, it is dry and mineral, rich and complex. It has a marked acidity and good concentration. The finish is long and persistent and recalls slightly spicy notes, due to aging in oak. Excellent with fish and white meat.
