Founded by the former antiques dealer Fred Schrader in 1998, Schrader Cellars is a very prestigious winery that produces a range of Napa Valley wines, with a focus on premium single vineyard Cabernet Sauvignon. Their most important and famous vineyard is undoubtedly the Beckstoffer To Kalon located in Oakville, where the exposure, coastal breezes, and soil with a high mineral content guarantee ideal growing conditions for Cabernet Sauvignon. Cellar practices are managed by winemaker Thomas Rivers Brown. The Cabernet Sauvignon grapes for this premium wine are selected from premium Napa Valley vineyards, including the famed Beckstoffer To Kalon and Beckstoffer Georges III vineyards. The wine is aged in French oak barrels (50% new). The wine has an intense and deep purple color. On the nose, it reveals a complex aromatic profile with aromas of raspberry, blackberry, and other small berries, cedar, mint, and tea leaves. On the palate, it is silky and concentrated with notes of ripe dark fruit, flowers, and chocolate. It is a powerful but also very dynamic wine, with a well-balanced freshness and a firm tannic structure. This Cabernet is ready to drink immediately, perhaps paired with beef or venison with a chocolate sauce, but it can also remain in the cellar for a few years.
