Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. Located in the Montosoli area, in the municipality of Montalcino, southern Tuscany, the Valdicava winery is a family-run business acquired in 1953 by Martini Bramante, grandfather of the current owner, Vincenzo Abbruzzese, who has managed the estate since 1987 with the help of Attilio Pagli in the cellar. The vineyards extend over approximately 10 hectares and are cultivated according to biodynamic principles and with very low yields. Brunello di Montalcino Valdicava is a 100% Sangiovese made from grapes organically grown on the northern slopes of Montalcino. After careful selection and manual harvesting, the grapes macerate for approximately three weeks. Fermentation occurs with native yeasts at a controlled temperature, and the finished wine ages for three years in Slavonian barrels before bottling and a further year of bottle aging. In the glass, the wine reveals an intense, deep ruby ​​color and a rich, broad aromatic profile with notes of ripe berries, interspersed with hints of tobacco, leather, and hints of undergrowth. On the palate, it is elegant and intense, soft and round, with firm yet well-integrated tannins and a pleasant, refreshing acidity. It has a full body and a long, warm finish that recalls red berry notes. Leave it in the cellar for a couple of decades or try it now with pheasant stew.
