The estate’s focus on quality begins with careful selection of fruit from their low-yielding vineyards, where vines are managed with utmost attention to detail. The 2011 Valpolicella Superiore is crafted using partially dried grapes, a process that concentrates the flavours before fermentation in stainless steel tanks. Aged in oak, the wine develops a harmonious balance of rich fruit and spice, with firm tannins and well-integrated oak. Aromas of ripe black cherry, plum, and hints of tobacco and cocoa lead to a long, structured finish. This wine is a true reflection of Dal Forno’s commitment to traditional methods and their pursuit of excellence.
