Founded in 2016 by the family that owns the boutique hotel The Vasilicos, Vassaltis Vineyards is a young and modern winery located on the island of Santorini that produces excellent wines from indigenous varieties such as Assyrtiko, Aidani, Mavrotragano, and Mandilaria. The wine is made with 100% Assyrtiko grapes, from basket vines that grow on the typical volcanic soil of Santorini. After the harvest, the grapes are pressed in whole bunches and fermented at a controlled temperature in steel tanks to preserve the fresh and aromatic character typical of this grape variety. The finished wine then rests on the lees for 7 months before bottling. Vassaltis Santorini Assyrtiko is a lively and expressive wine that perfectly reflects the unique terroir of the island of Santorini. In the glass, it reveals a bright lemon yellow color and an exuberant and complex aromatic profile with notes of ripe yellow fruit and stone fruit, wet stone and flint, followed by hints of candied citrus peel and honey. On the palate, it is rich and mineral with a creamy texture and a pleasant fruit concentration. It is dry and refreshing with a long finish that recalls saline notes. It is a very food-friendly wine: it goes well with Greek salads, vegetable or shrimp tempura, deep fried or grilled fish and seafood.
