Located in Catalonia, in the Montsant wine region, Venus La Universal is the personal project of Sara Pérez and René Barbier, which began in 1999. Today, the company that produces its wines organically with the intent of representing the richness of the Montsant terroirs, is considered one of the most prestigious wineries in the area. Universal Dido Tinto is a blend of mostly Grenache, with additions of Merlot, Cabernet Sauvignon, and Syrah. The organically grown grapes are sourced from a 10-hectare estate, located in Falset on degraded granite soils that heat up easily during the day and cool down during the night, favoring a long and complete maturation. Fermentation occurs with indigenous yeasts and the finished wine rests for 14/16 months partly in wooden barrels and partly in cement tanks. The wine reveals a fresh and young character and a bright and lively color with cherry red tones. Its aromatic profile is broad with notes of red fruit, wild herbs, and floral scents. On the palate, it is lively and juicy, round and soft. It has a refreshing acidic vein, soft tannins, and a velvety texture. The finish is long and delicately fruity. It is excellent with porchetta, Iberian ham, and goat cheese.
