Merchant's description

Cellar for up to 30 years. It is recommended to decant it for at least an hour. Located in Cornas, Ardèche, Vincent Paris started his business and founded his Domaine in the late 1990s, with a few hectares of vineyards inherited from the family estate. Since then, Vincent Paris has acquired more land and become one of the most sought-after producers of Cornas. Today, his vineyards extend over about 10 hectares cultivated in total respect for the soil and the environment without the use of chemicals. The Syrah grapes for the Cornas La Geynale de Vincent Paris come from the locality of the same name near Reynard. Here the vines are spread over steep hills facing south where the terroir, of exceptional quality, is made up of decomposing granite and gneiss. The vines with an average age of 80 years guarantee the production of incredibly concentrated and complex wines that age in used oak barrels (ranging in age from 1 to 8 years) for one year. This wine reveals an aromatic profile of great purity with spicy notes, a great richness of black fruit, and some fresh violet notes. On the palate, the wine is rich and powerful, complex and well balanced by a pleasant mineral note. The tannins are firm but perfectly integrated, and the finish is long and fresh. Try it with lamb or hare.
