Located in Paso Robles, Hope Family Wines was founded by Austin Hope, son of winemakers Chuck and Marlyn Hope, pioneers of viticulture in this beautiful corner of California who also helped establish the Paso Robles AVA. Today, the company, founded in the 1990s, includes six brands, including various Cabernet Sauvignons and Bordeaux blends. Cabernet Sauvignon grapes are harvested and fermented individually by vineyard lot for approximately two weeks. After a period of maceration, the various lots are aged separately for 11 months in a mix of new (10%) and used French oak barrels. The result is a complex wine that perfectly expresses the character of Paso Robles Cabernets, with great elegance and a wonderful balance between fruit and oak. On the nose, Austin Hope Reserve Cabernet Sauvignon reveals a fragrant aromatic profile that alternates notes of fresh blueberries with hints of vanilla and caramel, cocoa, and some earthy shades. On the palate, it is rich, juicy, and complex, with a full body and a soft consistency. It has perfectly integrated tannins and a long ending that recalls baking spices. In food pairings, it is versatile. Obviously, it is perfect with grilled red meat, but also pairs well with venison burger, pork belly, spicy lamb stew, and some hearty vegetarian recipes.
