Located in Israel, in the Judean Hills, Bin Nun is a winery founded in 2012 and specializing in the production of premium artisanal wines from French and Italian grape varieties. The estate's vineyards extend into the Ayalon Valley between Karmi Yosef and Kfar Ben Nun villages, on heavy, limestone-rich sloping soil. Here, the vines benefit from a very favorable microclimate, with cool breezes from the Jerusalem hills mitigating the heat and promoting slow ripening. The Barrel Reserve Cuvée is a Bordeaux-style blend composed primarily of Merlot and Cabernet Sauvignon grapes, with a small addition of Petit Verdot. The grapes are sourced from a single parcel of the estate's vineyard. After harvest and vinification, the wine ages for 18 months in new French oak. The result is a rich and expressive wine, revealing an intense, fruit-forward aromatic profile on the nose, with notes of plum and berries, interspersed with hints of chocolate and spice. On the palate, it is round, generous, and smooth, with ripe tannins and a lively, well-balanced acidity. The finish is long and recalls spicy notes. Try it with a Chateaubriand steak.
