Located in the Judean Hills, Bin Nun is a renowned Israeli boutique winery established in 2012, producing a wide range of excellent kosher wines. The estate has vineyards in the Ayalon Valley, planted with French and Italian grape varieties on heavy, limestone-rich soils. Thanks to favorable soil and climate conditions, these areas have a long winemaking tradition dating back several centuries. Bin Nun Reserve is a Bordeaux style blend of Cabernet Sauvignon, Merlot, with small additions of Cabernet Franc and Petit Verdot, sourced from a single vineyard in Givat Yeshayahu. After careful selection in the rows, manual harvesting, and vinification, the wine ages for one year in French oak. The result is a rich and easy-drinking wine with a broad and fragrant aromatic profile revealing notes of blackberry, currant, and small wild berries, followed by hints of liquorice, spice, and leather. On the palate, it is soft and generous, balanced and elegant. It has a full body, soft tannins, and a refreshing acidity. It is smooth and complex with a long finish that echoes the aromas perceived on the nose. Try it with beef fillet with mushrooms.
