Domaine William Fèvre has become a standard bearer for classically styled Chablis and is also now one of the biggest landowners in the region with 78 hectares of prestigious vineyards, including significant holdings in many Premiers Crus and in six of the seven Grands Crus. Vinification is very traditional with fermentation and maturation on fine lees undertaken in a combination of stainless and seasoned oak (ave. 6 years old). The 2016 Grand Cru Les Preuses is vibrant and enticing, exhibiting delicious notes of apple, citrus blossom and wet stones. It is delightfully harmonious on the palate, with super balance of fruit concentration, bright acidity, delicate smoky tones and delicious mineral depth. A wonderful wine to pair with almost any fish, shellfish or seafood.
