Domaine William Fèvre is a leading producer in Chablis and is one of the biggest landowners with 78 hectares of prestigious vineyards, including significant holdings in many Premiers Crus and in six of the seven Grands Crus. Vinification remains incredibly traditional with fermentation and maturation on fine lees undertaken in a combination of stainless and seasoned oak (ave. 6 years old). From the superb 2017 vintage, the Grand Cru Les Preuses is, once again, an excellent release. It is full-bodied, satin-textured and beautifully balanced, delivering lovely waves of citrus flesh, green apple, citrus blossom and crushed seashells, with delicately smoky notes and delightfully refreshing acidity.
