Founded in 2013 in Bar-sur-Seine by Simon and Marie Normand, the young Champagne house La Borderie owns about 11 hectares of vines that are about 50 years old, located in the Côte des Bar on clay-limestone soils. The house works with limited yields and vinifies the grapes separately by vineyard of origin to produce wines of excellent quality and great character. The Pinot Noir grapes come from a single plot located in Neuville sur Seine, Côte des Bar, facing north, planted in 1980. Vinification takes place mainly in vats and only a small part in barrels, to ensure the purest expression of the fruit. The wine rests in the cellar on the lees for 30 months. This Blanc de Noirs Extra Brut reveals a brilliant golden straw color. Its aromatic profile is broad and complex with mineral and limestone notes, fruity hints of apple and blackcurrant, wild strawberry and pink grapefruit and finally nuances of sweet spices, almond and honeysuckle. On the palate it is fresh and concentrated, soft and fruity. It has a creamy texture and a pleasant freshness. The finish is long and balanced. Try it with salmon lasagna, with oysters au gratin, pasta with crab sauce or roast turbot.
