Fortunately, Gérard Soutiran was taken in by a viticulturist who raised him and taught him the trade that would become his passion. When his military career came to an end in the 1950s, Gérard decided to found his own Champagne house by taking over the care of his adopted father’s vines. Today his legacy lives on with his granddaughter Valérie and her husband Patrick guiding the house into the future. At the heart of the Soutiran philosophy is an insistence on craftsmanship and allowing their Champagnes sufficient time to mature and develop in the bottle. All of their Champagnes spend at least five to eight years resting in the cellar before disgorging. The Signature Grand Cru is the house’s hallmark Champagne, boasting expressive aromas of star anise, pears and baked peaches. On the palate hints of wild red berries from the 65% Pinot Noir emerge to combine harmoniously with a salty minerality typical of the chalky Champagne terroir. This is a full-bodied Champagne with a delicate, creamy mousse which is equally at home gracing the table of a special occasion dinner or casually enjoyed with family and friends.
