Cellar for up to 15 years. Decanting optional, for up to 30 minutes before serving. Les Serpentieres is a vineyard in the heart of Savigny-les-Beaune, known for its fruity, fleshy Pinot Noirs. This one was crafted by Domaine Pierre Guillemot, a small winery, run by brothers Vincent and Pierre. The winery was founded by their grandfather in 1946, but the winemaking tradition in the Guillemot family goes back six generations, to the négociant, Phillipe. It begins with scents of ripe red hedgerow fruits, rose petals, star anise, and baking spice. It is a beautiful deep purple-red in the glass, packed with complex character and a medium to full body, thanks to the reddish brown soils that Les Serpentieres grows upon. In the mouth, it is laden with flavours of sour cherry, plum, and redcurrant, with warm, earthy hints of truffle, liquorice, and cinnamon. It has a rich, velvety mouthfeel, with subtle, finely-grained tannins, and a thick vein of acidity. Domaine Pierre Guillemot’s Burgundy’s are fermented in oak barrels, making them suitable for extended ageing. Consider pairing this one with roast chicken, vegetable tagine, or a mushroom burger.
