Located in Burgundy, in Paris L’Hopital, Domaine Saint-Marc was founded in 1489 and boasts nearly six centuries of winemaking tradition. Today, the estate, which extends across approximately 8.5 hectares of vineyards cultivated using sustainable practices and without the use of pesticides, is managed by Arnaud Mitanchey. The Chardonnay grapes come from the Bois de Blagny vineyard, just above the Premier Cru "La Pièce sous le Bois" at the top of the slopes. Here, young vines benefit from eastern exposure in stony, marly soils with calcareous debris. After manual harvest and barrel fermentation, most wine ages in barrels (40% new) and the rest in stainless steel on the lees for one year. Meursault Bois de Blagny is a wine of great elegance, featuring an intense and rich aromatic profile that releases notes of white flowers, citrus, yellow fruit, and butter, with final touches of toasted bread and almonds. On the palate, it is soft and velvety, fresh, and delicately fruity. It is powerful yet balanced, taut and mineral, with a long, persistent finish. It is a wine that can age for several years, or be enjoyed now with sole meunière or snails Burgundy-style.
