Domaine Saint Marc is located in Burgundy, in the Saône-et-Loire region, and covers approximately 8.5 hectares of vineyards spread across 12 appellations. The estate boasts a long tradition spanning six centuries of winemaking history, and is today managed by Arnaud Mitanchey, who meticulously works his vines with great respect for the terroir and nature to produce top-quality white and red wines. The Pinot Noir grapes come from the 30-year-old Le Chainey vineyard, located at 300 m altitude, on the upper slopes of a steep hillside just above the Premier Cru Grand Clos Rousseaux. The soil is poor and stony, with a clay-limestone composition. After manual harvesting and a pre-fermentation cold maceration, fermentation lasts a couple of weeks. The finished wine then ages in barrels for 12 months (30% new barrels). In the glass, Santenay Les Chainey displays a clear garnet-red color and an elegant and fragrant aromatic profile with notes of red and black fruits, followed by earthy and mineral notes. On the palate, it has a medium body and a pronounced minerality. It is soft, round, and fruity with well-balanced acidity and fine, ripe tannins. The long finish evokes earthy notes. Try it with roasted mushrooms or game birds.
