Drink now or cellar for up to 20 years. You know that when the name Pingus comes into wine conversation that you will get something special and the Flor de Pingus falls very much into that category. Their approach to making these exquisite wines is to almost treat every grape as if it was the most important one on earth! The grapes are very carefully selected and hand harvested. This selection occurs in both the vineyard and the winery. The grapes are manually destemmed and the ripest grapes are manually deseeded. Following this careful preparation, the grapes are then macerated and fermented for 20 days. They are then transferred to oak barrels where they undergo malolactic fermentation before starting 18 months of maturing in new French oak barriques. The colour of the wine is a fantastic plum that captures your attention straight away. The nose fires off a volley of ripe plums, red and black fruit, cinnamon, and a hint of oak inspired vanilla. A delicate smoky minerality is also present. On the palate, there is an explosion of ripe fruit, raspberry, plum, blackcurrant, blackberry – combined with beautiful, well integrated tannins, superb acid, and a full bodied, luscious mouth feel. The finish is classy, well balanced with a silky, very long and beautifully lingering feel with just a hint of pepper at the end. Will match with ease with red meat, smoky cheese, game, foie gras – or better still, drink on its own.
