Drink it now or cellar for up to 25 years. It is recommended to decant it for an hour. Founded in 2010, Domaine François Carillon is one of the most renowned wineries in the Côte de Beaune. The Carillon family has been known in Puligny Montrachet for over 5 centuries, and Francois worked in the family business for several years before deciding to embark on his own project and split the family vineyards with his brother. Today, his estate extends over 16 hectares of beautiful vineyards, where Chardonnay (90%), Aligoté and Pinot Noir are grown. This splendid Puligny Montrachet is made with Chardonnay grapes sourced from the 1er cru Les Enseignères vineyard located just below the Grand Cru Bienvenues-Bâtard-Montrachet on clay and limestone soils. After manual harvest and vinification in oak barrels, the wine rests for about 6 months in vats, before being bottled following the biodynamic calendar. Quintessential Puligny Montrachet, this wine has an intense and broad aromatic profile with notes of pink grapefruit, kumquat, and honey, followed by mineral notes. On the palate, it is deep and rounded, concentrated and extremely elegant, with a long and persistent finish and a firm and noble character. It is the perfect wine for chicken supreme, roasted white fish, or lobster.
