Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Originally from Belgium, Frank Cornelissen moved to Sicily in 2001 to start his own winemaking business on the slopes of Mount Etna. He owns vineyards located between 600 and 1,000 meters above sea level, cultivated with a non-interventionist philosophy to allow the volcano's extraordinary terroir to fully express itself. His wines are endowed with great purity, an extraordinary minerality and aromatic complexity. Munjebel Bianco is a blend of Grecanico Dorato and Carricante grapes from the ungrafted Calderara, Crasà, and Piccioloche vineyards located on the slopes of Mount Etna in the municipalities of Randazzo and Castiglione di Sicilia. The vines, averaging over 30 years old, enjoy northern exposure. After harvesting and fermenting with indigenous yeasts, the wine ages in large fiberglass tanks for approximately 16 months. In the glass, the wine reveals an intense straw-yellow color and a broad, layered aromatic profile with notes of ripe yellow fruit, quince, and pear, interspersed with hints of Mediterranean herbs and orange zest, with mineral and honey touches. On the palate, it is fresh and complex with a distinctive savory character and a pleasant acidity. It has good structure and an elegant character. The finish is long and persistent with mineral notes. It pairs perfectly with fish, grilled or roast poultry, and medium-aged cheeses.
