Champagne Henri Goutorbe is situated in the renowned Grand Cru village of Aÿ, in the heart of the Champagne region. Situated within a mile of Bollinger and m ade from 70% Pinot Noir (the speciality grape of A ÿ) this truly is the expression of one of the most renowned villages in Champagne. The quality of the grapes, which are harvested manually, is a result of the careful selection of the best vines, based on their genetic features and on the specificities of each plot. After pressing the grapes slowly and adapting the vinification in stainless steel vats to each plot’s particular features, the blend is followed by a second fermentation in the bottles. The champagne is aged on lees in the bottles for at least three years in the historic cellars.
