Located in the heart of the Muscadet-Sèvre et Maine wine region, in the prestigious Loire Valley, Domaine Jean-Baptiste Hardy extends over approximately 40 hectares of vineyards. After various experiences around the world, Jean-Baptiste took over the family business, working rigorously and respectfully with the environment, and practicing artisanal winemaking. Éclats is a white wine made with Melon de Bourgogne grapes selected and hand-picked from different plots characterized by a soil of gabbro, a volcanic rock. After the harvest and fermentation with indigenous yeasts, the wine rests for a year and a half on its lees in glass-lined concrete vats, before being bottled without filtration or clarification. In the glass, the wine reveals a bright and clear color with straw yellow tones and greenish reflections. Its aromatic profile is fresh and youthful with notes of tropical fruit and mineral and iodine hints. On the palate, it is round and invigorating, approachable and crisp, with a bright and thirst-quenching acidity and a marked mineral vein that continues on the long finish. Enjoy it served chilled, as an aperitif on a warm summer evening, or pair it with fresh seafood salads, lemon sole, or grilled prawns.
