The estate was founded in 2008 by the Mendoza family who have been involved in the wine industry for over three generations and craft their wines from their own vineyards. La Mascota Winery is committed to sustainability and uses environmentally friendly practices in its vineyards and winemaking processes, including a state-of-the-art irrigation system that conserves water. This La Mascota cuvee is a 100% Cabernet Sauvignon crafted from grapes which are hand-harvested and carefully selected for their quality. The wine is fermented in stainless steel tanks and then aged in French oak barrels for 12 months for additional complexity and intensity. Luscious blackcurrant, blackberry and vanilla dominate on the nose along with hints of spice and tobacco. The first sip reveals a punchy full body, smooth tannins, and lingering notes of dark fruit, chocolate, and toasted oak. Excellent pairings for this robust Cab include mature hard cheeses, grilled red meats, and even barbecued ribs. If desired, it could also be cellared for a few more years to soften the tannins even further.
