Benefiting from the cool climate and chalky soils of the South Downs, this wine develops intensity while maintaining a vibrant, citrus-led acidity. The grapes are hand-picked, whole-bunch pressed, and fermented with wild yeasts in a combination of used oak and stainless steel.
