Cristal Vinothèque 1997 is produced from a blend of 62% Pinot Noir and 38% Chardonnay with a dosage of 8g/l. In the words of Cellar Master, Jean-Baptiste Lécaillon, the 1997 is `A magnificent expression of a mature champagne, concentrated by the passing of time yet, at the same time, so fresh and refined.` On the nose, a complex bouquet of white flowers, almonds, honey and nougat together with caramelised tarte tatin quality. Luscious and velvety on the palate, with candied citrus character accompanied by saline chalky freshness.
