Oliver Zeter plant their Cabernet Franc in their Hambach and Mussbach sites, which warm up more quickly. Theis allows the development of a seductive array of flavours. After a fermentation using wild yeasts the Cabernet Franc is matured in Italian amphora where the micro-oxidation, without the addition of any wood aromas, allowing the develpment of a sophisticated tannin structure combined with an unadulterated varietal character. There's a complex blend of blueberries, blackberries and cassis paired with a well balanced body where the mature tannins balance the wine wonderfully. Oliver Zeter
