Located in Castiglione Falletto, one of Piedmont's most prestigious wine regions, the Paolo Scavino winery was founded over 100 years ago by Lorenzo Scavino and his son Paolo and is now managed by Enrico, Paolo's son, with his two daughters. The estate today extends across approximately 30 hectares of vineyards, where Nebbiolo is the dominant grape. Langhe Nebbiolo is a varietal wine produced from grapes harvested in the vineyards of the Langhe hills. After fermentation in stainless steel at a controlled temperature, the wine ages first in stainless steel for 6 months and then in oak for another 12 months. The result is an expressive and balanced wine that reveals complexity while maintaining a pleasant freshness and liveliness. In the glass, the wine displays a pale, clear ruby color with some garnet highlights. Its aromatic profile is broad and complex, with vivid fruity notes alternating with tertiary hints of spice and aromatic herbs. On the palate, it is harmonious and balanced, with a medium body and a well-integrated tannic backbone. It is savory, elegant, and endowed with a refreshing acidity. The finish is gently spicy. It pairs perfectly with pasta with sauce, meatballs, and Italian veal Milanese.
