Situated on the slopes of the Gombori Mountains, strategically overlooking the Caucasus Mountains and the Alazani River Valley, Papari Valley Winery is a small family business with a long tradition that only started selling its wines in 2015. Papari Valley cultivates its vineyards organically and uses traditional Georgian and Kakhetian winemaking methods, practicing spontaneous fermentation and aging in clay vessels. This traditional Georgian wine is made from the ancient indigenous grape variety Saperavi. The grapes are selected from over 10 hectares of the company's vineyards in the Kakheti wine region and fermentation occurs spontaneously. After vinification, the wine rests in Qvevri, as is traditional, before being bottled and released to the market. In the glass, the wine reveals an intense ruby color. Its aromatic profile is broad and rich with fruity notes of dark berries, blackberries, and cherries, followed by spicy and slightly smoky aromas. On the palate, this wine is expressive and rich, powerful and well-balanced with a fresh and lively acidity. It has a medium-full body, velvety tannins, and a long and pleasantly warm finish. It makes an excellent pair with venison in chocolate sauce or game stews.
