Penfolds Bin 600 references a historic cross-border project that saw wines shipped from California to Australia in the 1990s. This particular cuvee is made entirely from Californian grapes from Napa and Paso Robles with Penfolds’ signature house style and multi-regional blending approach applied in the winery. Their Australian identity shows through firstly in the decision to blend Cabernet with Shiraz, a practice that is common in Australia but rare in California where they’re usually bottled separately. Fermentation takes place in stainless steel tanks with regular pumpovers to extract more colour and intense flavours and aromas. In keeping with Penfolds traditions, the Shiraz and Cabernet are aged separately in American oak barrels for 16-17 months with some new oak to add extra complexity and spice. Bursting with notes of crushed cassis, blueberries and ripe plums seasoned with cedar, coconut and warm spice from the oak, this is a powerful, structured and opulent wine that works beautifully with hearty red meat dishes. The firm, ample tannins and rich fruit make it a great match for barbecued meats, ribeye steak, and hearty winter stews.
