For some 150 years Penfolds has enjoyed a reputation as one of Australia’s premier wineries, and now their winemaking team is extending that vision to new frontiers. Bin 704 makes a new alliance between viticulture in the northern and southern hemispheres, sourcing Cabernet Sauvignon fruit from prime vineyards in California and applying Penfolds’ signature house style. Bin 704 was designed to be the mirror image of their Bin 407, their renowned South Australian Cabernet which debuted with the 1990 vintage. The fruit for Bin 704 is sourced from trusted growers in the Napa Valley. After vinification the young wine ages in French oak barrels, 48% of which are new, to soften the punchy tannins and add polish and complexity. Luscious dark plum and sweet cherry are first out of the glass, followed by undertones of wild fennel and black liquorice. The solid tannins and powerful structure make this a great partner for hearty winter stews as well as fine steaks and barbecued meats. It’s a great wine to enjoy now alongside food or to keep in the cellar for another decade or so.
