Since its establishment in 1983, the aim of Peter Michel Winery has been to produce small quantities of elegant, terroir-driven wines in the mould of the very best wines of Bordeaux and Burgundy. Les Pavots is the flagship Cabernet Sauvignon-dominant blend produced with fruit from the Knights Valley AVA in Sonoma County. The 2016 is a sensational release with delicious and sophisticated notes of black cherry, crème de cassis, vanilla bean, garrigue herbs and forest floor. Full-bodied yet unendingly elegant, this has superb potential cellaring.
