After years of winemaking experience in Japan and then in France at prestigious wineries, Seiichi Saito decided to set up his own business in Chorey les Beaune in 2016. His young company has about 2 hectares of vineyards cultivated according to biodynamic regimes. In addition, Saito sources high-quality grapes in smaller appellations to produce his wines, which in just a few years have already achieved great popularity and critical acclaim. The Pinot Noir grapes come from a plot in the municipality of Cormot-le-Grand, where the vines, planted between 1958 and 1988, enjoy clay-marl soil and a north-west exposure. Fermentation occurs spontaneously with indigenous yeasts and the finished wine then rests for a year in used barrels and for another 6 months in a tank before being bottled and released onto the market. Petit-Roy Hautes Cotes de Beaune Vignes Vilon is an elegant wine with an intense and brilliant ruby ​​color. On the nose, it reveals a broad and fragrant aromatic profile with notes of cherry and wild berries, followed by slightly spicy hints and some nuances of undergrowth. On the palate, it is well structured and rich, round and concentrated with firm but velvety tannins and a pleasant refreshing acidic vein. The finish is long and recalls mineral notes. It is the ideal wine for guinea fowl or roast duck, but it also goes well with mushroom-based preparations.
