Domaine François Carillon Puligny-Montrachet 2012 is a Chardonnay from eight distinct lieux-dits within the Puligny-Montrachet appellation. These parcels, including Derrière la Velle and Les Levrons, feature the classic clay and limestone soils that define the world`s most prestigious white wines. Carillon uses traditional Burgundian methods, including fermentation and ageing in French oak barrels with about 15% new wood to enhance texture without masking the terroir. The 2012 vintage produced wines with excellent concentration and a driving acidity. This magnum format has helped retain the wine`s energy, offering a bouquet of lemon zest, white peach and a saline minerality. It is a steely, linear wine with a long, citrus-inflected finish.
