Domaine Tollot-Beaut’s Savigny-lès-Beaune Premier Cru ‘Les Lavières’ opens with a nose that really jumps from the glass — bright red berries, darker cherry fruit, and now a gentle hint of woodland and forest floor as it starts to evolve. On the palate it’s fresh and lively, with lovely purity of fruit, crisp acidity and ripe, polished tannins keeping everything in balance. It’s drinking beautifully now, but will happily cruise along for the next few years. Savigny-lès-Beaune sits between Beaune and the grand cru slopes of Corton, and often flies under the radar because of its famous neighbours. That’s good news for those in the know — the wines can offer superb value with real pedigree. ‘Les Lavières’ is one of two Premier Crus from Tollot-Beaut in Savigny, and it’s usually the first to really hit its stride, showing its charm and finesse a little earlier than its sibling.
