Tapiz’s consultant winemaker is the famed Jean-Claude Berrouet who previously made wine at both Chateau Petrus in Bordeaux and Dominus in Napa Valley, two of the world’s most respected wineries. Tapiz has emerged in recent years as Argentina’s most high-tech winery thanks to their dedication to research and development in collaboration with local organisations like the University of Cuyo. This luscious Cabernet is part of Tapiz’s Alta Collection wines which use fruit from the winery’s Finca San Pablo estate in Mendoza’s Uco Valley in the foothills of the Andes. Conditions here are ideal for making intensely-flavoured red wines thanks to the 1400 metres of altitude and cooling breezes from the nearby mountains. The cooler nights even during the hot summers help to preserve acidity in the grapes and a long, slow ripening period which intensifies their flavours and aromas. Blackberry jam, cassis and baking spice define the nose of this powerful Cabernet while the palate offers well-rounded tannins, a smooth texture and a full body. The finish is long and clean with hints of cinnamon, cloves and vanilla from the maturation in oak barrels. The punchy flavour profile makes this a great match for red meats including steak, barbecued meats and beef stews.
