Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. With their long winemaking tradition and pioneering spirit, in 2019, Bodegas Valdemar embarked on a new adventure by establishing Valdemar Estates in Washington State, USA. Here, Jesús and Ana Martínez Bujanda produce premium wines that reflect the potential of the Walla Walla Valley terroir. The Cabernet Sauvignon grapes (with small additions of Petit Verdot and Merlot) come from the Eventide vineyard, one of the most important in Valdemar Estates. Here, the slope, altitude (between 270 and 380 meters), and northeast exposure create unique conditions that favor the production of lively and concentrated wines (also thanks to the low yields). After harvesting and vinification, the finished wine ages in French oak barrels (22% new) for approximately a year and a half. The result is an expressive and characterful wine with a fragrant aromatic profile that combines notes of black cherry, blackberry, and dried fig, followed by earthy and tea leaf aromas. On the palate, it is generous, rich, and concentrated, with a full body and firm tannins. It has a lively acidity and a long finish that recalls light notes of tobacco and cedar. Try it with beef brisket and grilled red meats.
