Vassaltis Plethora 2021 is a full-bodied Assyrtiko from Santorini that undergoes extended skin contact and long ageing. This cuvée is fermented in stainless steel before spending 14 months on its lees in old French oak barrels. The nose is intense with aromas of dried citrus peel, honey, toasted nuts and the classic smoky basalt minerals of the island. On the palate it is full-bodied and oily with a concentrated core of ripe yellow fruit and a firm structure that suggests great longevity. The finish is remarkably long and salty, showcasing the raw power of the volcanic terroir without losing the characteristic acidity that defines the estate`s style.
