Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Created in 1999 by Sara Pérez and René Barbier as their personal project, Venus Universal is a small wine estate in the DO Montsant that extends over approximately 4 hectares of vineyards and also collaborates with local cooperatives. The company produces its wines from organically grown grapes and carries on a philosophy of total respect for the environment. The wine is made with Garnacha grapes sourced from the village of La Figuera, in the Guixà parcel, at about 600 meters above sea level, on white clay and limestone soils. The soil and climate conditions favor the production of a very elegant wine with a well-balanced structure and a strong acidity. Fermentation takes place in open barrels and after a period of maceration, the finished wine rests for 18 months in ceramic jars. Venus La Figuera is a succulent and fragrant red wine that reveals a broad bouquet of floral and fruity notes on the nose followed by balsamic and mineral hints. On the palate, it is fresh and juicy, lively and fruity. It has a medium body and a strong acid streak. The finish is long and recalls mineral notes. Try it with lamb stew, mac and cheese, or spicy pork ribs.
