Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Located in the southern part of the municipality of Cornas in the Rhône Valley, the Vincent Paris winery was established in the late 1990s, when Vincent inherited one hectare of vineyards from his grandfather. Today, the estate extends over approximately 10 hectares and also includes plots in the Saint-Joseph area. Vincent Paris is now recognized as a great talent for his excellent wines with great aging potential. The vines are grown sustainably without the use of chemicals. The Syrah grapes come from a vineyard averaging 30 years old, planted on alluvial soil with the typical Rhone-style roulets. After harvest, fermentation takes place at low temperatures in tanks, where the wine then rests for 9 months. The Selection Crozes-Hermitage by Vincent Paris is an expressive and intense wine that reveals a broad and fruity aromatic profile on the nose, with notes of blackberry and blueberry, hints of violet, and peppery and leathery touches. On the palate, it is smooth, elegant, and fruit-forward. It has a full body and soft, velvety tannins. It is concentrated and generous, succulent and round. The finish is long and persistent with peppery overtones. The perfect food pairing is with lamb chops.
