La Côte aux Enfants is a single-vineyard, 100% Pinot Noir champagne from the Grand Cru village of Aÿ. It is made from grapes grown on a 4-hectare parcel that was originally owned by over 50 different people. Jacques Bollinger, the former head of Bollinger, patiently reconstituted the parcel at the beginning of the 20th century. La Côte aux Enfants is a rare and highly sought-after cuvée. It is only produced in exceptional years, when the grapes reach perfect maturity. The wine is aged for a minimum of 7 years in oak barrels, which gives it its complex and mature flavour profile.
