Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. The Language of Yes is a California winery founded and led by renowned winemaker Randall Grahm, honoring the French winemaking tradition of the Languedoc and Roussillon regions. Even the winery's name (Language of Yes) refers to the Old French dialect (Langue d'oc), which predates Provençal. The winery focuses its production on the full expression of the terroir and a minimal-intervention approach. The wine is a blend of Syrah co-fermented with a small amount of Viognier. The grapes come from the Rancho Réal vineyard in the Santa Maria Valley, one of the coolest grape-growing locations in California. The climate ensures the full development of the typical peppery notes in the Syrah. Half whole-cluster fermentation occurs, and the finished wine ages for a year in used oak before bottling without fining or filtration. The Language of Yes Syrah is a wine with an intense and exuberant aromatic profile, with notes of blackberry and plum, black cherry, and berries, followed by hints of violet, wild herbs, and black pepper. On the palate, it is deep and broad, fruity and concentrated, with firm, ripe tannins and a well-balanced acidity. The finish is long and fruity with subtle hints of caramel and cocoa. Enjoy it with grilled lamb chops or pulled pork. It also pairs well with goat cheese.
