Darren Smith & Raúl Moreno Palomino 2022 is a medium-bodied skin-fermented white wine produced from Palomino grapes in the Jerez region of Spain. Through his nomadic winemaking project, The Finest Wines Available to Humanity, Darren Smith produces one-off wines from locally indigenous grape varieties with emerging winemakers around the world. This 2022 Palomino, produced in collaboration with sommelier-turned-winemaker Raúl Moreno, is from a single plot of clone 84 Palomino. Fermented with skins and stems, it was aged under flor in a single chestnut amontillado Sherry cask. Sapid and complex with notes of dried apple, orange and curry leaf, and a fine chalky finish.
