Pavie 1990 is a full-bodied Merlot-based red wine from the St-Emilion appellation of Bordeaux. Château Pavie is one of the finest wine producing estates in St-Émilion. Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. On the 1990. "Perhaps the last great Pavie before Gerard Perse bought the estate in 1997. The 1990 Pavie sports a deep core with deep tawny rim and sports a very “classic” Pavie bouquet that is muted at first, but unfurls gracefully with intense cedar aromas deriving from the Cabernet Sauvignon. Underneath there are aromas of crushed stone and a touch of cold black tea. It does not have the vim and vigour of the 1989. The palate is medium-bodied and whilst it is not as vigorous as a couple of years ago, it retains a supple texture, impressive harmony and a lovely wild strawberry, fig, leather and brine tinged finish.
